"Kotopoulo kokkinisto" - Chicken in tomato sauce



- 1 whole chicken or chicken parts of your preference, approx 1,5 Kgs
- 3 medium sized onion chopped in small pieces or grated
- 12 table spoon virgin olive oil
- 2 cloves of garlic
- 1 tea cup of tomato paste
- 1 tea spoon sugar
- 1 glass of water (preferebly hot)
- 1 tea spoon ground cinnamon
- half a tea spoon ground clove
- 1 shot of tsipouro (greek spirit)
- salt and black pepper to taste


- cut the chicken in 8 pieces
- saute the chicken pieces in a sauce pan with 8 table spoons virgin olive oil till golden brown
- take the chicken off the pan
- add the rest of the olive oil in the pan together with the chopped onions and the garlic
- saute for 5-7 minutes in medium temperature
- put the chicken in the pan
- add 1 large glass of hot water and let it boil for 10 minutes
- add the tomato paste and salt and pepper to taste
- let it boil till almost all liquids evaporate (it might need a bit more water - depending on the heat and the meat)
- add the cinnamon, the clove and the shot of tsipouro.
- keep on low fire to simmer for 5 minutes so the alcohol evaporates

Serving ideas:
- with fried potatoes
- with boiled rice
- boiled vegetables (pees, green beans etc)
