“Artos” (home made bread)

Ingredients:

  • 600 gr of wheat meal or all purpose flour
  • 10gr of fresh beer yeast
  • 1 tbs of honey
  • 1 tsp of salt
  • 300 gr of water at room temperature

Ingredients:

  • 600 gr of wheat meal or all purpose flour
  • 10gr of fresh beer yeast
  • 1 tbs of honey
  • 1 tsp of salt
  • 300 gr of water at room temperature


Instructions:

  1. In a large bowl put the water the yeast and the honey
  2. Start stirring with a large spoon to disolve them as much as possible.
  3. Sieve the flour in and start kneading with your hands (don't forget to wear rubber gloves)
  4. Add the salt
  5. Continue kneading for at least 10 – 15 minutes till all ingredients are incorporated well and form an elastic dough which is not sticking around the bowl
  6. Make the dough a ball and lift it from the bowl.
  7. Sprinkle around the dough flour and place it back in to the bowl (it will prevent it from sticking in the bowl after it will have risen up)
  8. Let it rest either in room temperature for at least 1 hour untill it will double its size
  9. Knead it again and repeat steps “5” and “6”.
  10. Put the dough in a pan which you will have first covered its surface with olive oil (a table spoon of oil is enough – use your hand to spread it well all over the pan's surface)
  11. Cover the pan with the dough with a clean kitchen towel and let rest for at least 2 more hours in room temperature.
  12. Bake it for 45 minutes in a preheated oven at 180 degrees Celcius.

Tips:

  1. Depending of flour type and quality you might need to add or reduce to quantity of flour or even the water. The rule is dough will have to be elastic and non sticky.
  2. After you will have put the dough in the oven DO NOT OPEN ITS DOOR earlier than 40 minutes.
  3. After you will have the pan with your bread out of the oven use an clean towel to turn it upside down in the pan.
  4. Keep it there till it reaches room temperature. Then use a couple of clean towels to cover it all around to prevent it from drying
